Oyster Po'Boy

Serves 4

1 gallon vegetable oil, for frying 

1 quart oysters

3 large eggs

3 cups cornmeal

1/4 cup all-purpose flour

1 1/2 teaspoons salt

1 teaspoon Cajun Seasoning

1 teaspoon black pepper

4 6-inches long french bread loafs 

2 medium tomatoes, sliced 

shredded lettuce

mayonnaise 

dill pickle slices

salt and pepper

In a dutch oven heat oil to 350 degrees.  In a medium bowl, beat the eggs, add oysters and let stand for 5 minutes.  In a large mixing bow, combine the cornmeal, flour, salt, Cajun seasoning, and pepper.  Dip oysters, six at a time, in the egg batter and then into the corn meal, corn flour mixture. Place in the deep fryer at 365 degrees F and cook until oysters float, approximately three minutes. Remove and drain and keep warm. Continue until all oysters are fried.  Spread with mayonnaise on french bread. On the bottom of the bread, arrange layers of shredded lettuce, oysters, tomato slices, and sliced pickles. Sprinkle with salt and pepper.
